Beef Stew

- Ingredients
- 3 tbsp rice bran oil
- 2 onions
- 1kg beef (cubed)
- 700g potatoes (cubed)
- 700g carrots (cubed)
- 3 large leeks (sliced)
- 1.5 litres beef stock
- 3 tsp mixed herbs
- Salt & black pepper
Optional:
- Dumplings
- Corn flour
- Method
1.Sear the onions until softened. Add the meat and sear until completely browned
2. Add this, carrots, leeks, potatoes and beef stock to slow cooker pan. Set to slow cook on medium for 5-7 hours, until all the meat and vegetables are tender
3. Add the dumplings 30 minutes to 1hour before the end
4. Serve with rice
- Special tips & hints
To thicken the liquid in the slow cooker use corn flour mixed separately in cold water and when this is a thick paste, add to the slow cooker 30 minutes before cooking finishes
