Apricot Chicken

- Ingredients
- 4 x 280g skinless chicken breast
- 2 garlic cloves, crushed
- 1 tablespoon grated fresh ginger
- 1 tablespoon ground coriander
- 1 teaspoon ground cinnamon
- 2 tablespoons vegetable oil
- 400ml tinned apricot nectar
- 1 tablespoon honey
- 60g slivered almonds, toasted
- 1 handful coriander leaves
- Method
1. Put the chicken, garlic, ginger, cumin, coriander, cinnamon and oil in a dish. Toss to thoroughly coat the chicken in the oil and spices. Cover and refrigerate overnight.
2. Remove the chicken from the marinade and place in the slow cooker with the apricot nectar, honey and lemon juice. Cook on high for 5-6 hours, or until chicken is cooked through.
3. Season to taste with salt and freshly ground pepper. Top with the toasted almonds and coriander and serve with rice.
