Bay Leaf Roast with Potatoes and Peas

- Ingredients
- Leg of lamb, scored
- 10 large bay leaves
- 1 teaspoon crushed garlic
- 125g unsalted butter
- 1 can diced tomatoes
- Salt and freshly ground pepper
- 1 stick celery, sliced
- 1/4 cup extra virgin olive oil
- 6 potatoes cleaned and quartered
- 1 cup frozen baby peas
- 1 tub of prepared hummus
- Method
1. Melt butter in pan and sear meat.
2. Place bay leaves and celery on base of slow cooker pot and add meat, garlic, potatoes and pour over oil. Season with salt and freshly ground pepper.
3. Add tomatoes and slow cook on high for 4 hours. Then add peas and cook for another hour.

Spread 2 teaspoons of hummus on a plate then cover with slices of meat before adding potatoes and peas
