Beef Romano

- Ingredients
- 750g stewing steak, cut into 1-2 cm cubes
- 3 tablespoons plain flour
- 3 tablespoons oil or butter
- 3 rashers chopped bacon
- 1/2 cup red wine or beef stock
- 1 tablespoon thyme chopped
- 400g of crushed tomato or alternatively a 400g jar of pasta sauce
- 1 zucchini, sliced
- 1 red or green capsicum, sliced
- 1 small leek white part only, sliced
- 2 medium carrots, sliced
- Salt and freshly ground black pepper
- Method
1. Season beef and toss beef in flour. Brown the beef in batches and then brown the bacon.
2. Place all the vegetables in the slow cooker and top with meat, then mix wine/stock & cooking sauce and pour over.
3. Set slow cooker on high for 6 hours.
4. Serve
