Bread and Butter Pudding

- Ingredients
- 1 loaf toast bread
- Butter
- 3/4 cup orange flavoured liqueur or orange juice
- 1 cup sultanas
- 1/2 cup mixed peel
- 1 cup apricot jam
- 6 eggs
- 3/4 cup sugar
- 1 cup milk
- 2 cups cream
- 1/4 cup dark brown sugar
- Method
1. Cut crusts from bread. Butter each slice thickly on one side. Line the base and sides of the slow cooker with the bread buttered side to the outside.
2. Drizzle orange liqueur or juice over bread, sprinkle with raisins and mixed peel. Place small dollops of jam over the fruit.
3. Beat eggs and sugar together until light. Add milk and cream and beat lightly to combine. Pour egg mixture through a fine sieve into the slow cooker. Use remaining bread to cover the top of the pudding, butter side up. Sprinkle dark brown sugar over the top. 4. Cover and cook on low for 4-5 hours, or until set. The pudding is cooked when a skewer inserted into the centre comes out clean.
5. Serve hot with extra whipped cream
