Cauliflower Soup

- Ingredients
- 1 tablespoon unsalted butter
- 1 medium onion, coarsely chopped
- 2 cloves garlic, sliced
- Pinch of ground nutmeg (optional)
- 4 1/2 cups vegetable stock
- 1 1/2 cups white wine (optional - if using reduce stock)
- 1 medium trimmed cauliflower, coarsely chopped
- Method
1. Heat the butter in a saucepan pot over medium-low heat until melted.
2. Add onion & garlic and cook, covered, stirring occasionally, until tender but not browned.
3. Add cauliflower and cook for additional 3-5 minutes.
4. Put mixture in the slow cooker, along with the stock, wine & nutmeg. Cook for 4-6 hours on low.
5. Let cool, then puree and serve.
- Special tips & hints
To add a bit of flair, serve with croutons and a sprig of parsley.
