Chicken Coq Vin

- Ingredients
> 1 large chicken quartered
> Oil
> 10/12 small white onions,peeled
> 250g whole mushrooms
> 1 teaspoon finely chopped garlic
> 10/12 small new potatoes,unpeeled
> 300ml's liquid chicken stock
> 1 cup red wine (250ml)
> 1/2 teaspoon dried thyme leaves
> 6 bacon slices, cooked and crumbled
- Method
1. Brown chicken quarters on both sides in a a frying pan with a little oil added.
2. Place onions,whole mushrooms,garlic and thyme into the slow cooker.
3. Add chicken quarters,potatoes,chicken stock and a little salt and pepper
4. Cover and cook.
- Special tips & hints
During last hour turn heat to high, add red wine and continue cooking.
Sprinkle crumbled bacon over chicken before serving.
