French Onion Soup

- Ingredients
- 20g butter
- 1 tablespoon olive oil
- 1kg brown onions, thinly sliced
- 1 cup white wine
- 3 cups beef stock
- 4 thyme springs
- Handful of parsley, chopped
- Method
1. Put the butter, olive oil and onion in the slow cooker. Cook on low for 4 hours, stirring occasionally.
2. Add the wine, stock, 250 g water and thyme. Cook on high for a further 2 hours. Season to taste with salt and freshly ground black pepper.
3. Sprinkle with parsley and serve with crusty bread.
