Lamb Shanks in Red Wine Sauce

- Ingredients
> 2 x large lamb shanks
> 1/2 cup red whine
> 1 cup beef stock
> Red onion chopped
> Rosemary sprig
> Thyme leaf sprig
> 4 x potatoes quartered
> Flour to dust on shanks
- Method
1. Dust the shanks with the flour and slightly pan fry to seal all pink meat.
2. Place chopped onion in and fry for one minute just to moisten.
3. Put shanks, onions into slow cooker, with the quartered potatoes, stock, red wine and herbs.
4. Cover & Cook on slow for 8 hours
- Special tips & hints
Vegetable stock can also be used. If you like a sharper taste add garlic with onions and forget red wine, then just double the stock amount.
